This vibrant escarole and butter lettuce salad is a sophisticated vegan starter that celebrates a beautiful balance of textures and seasonal flavours. The slightly bitter notes of the escarole are perfectly offset by the velvety softness of butter lettuce, while fresh pomegranate seeds provide a bright, jewel-like crunch. A zesty citrus dressing made with orange, lemon, and lime zest ties the dish together, offering a refreshing acidity that cuts through the earthy toasted hazelnuts.
Ideal for a light lunch or as an elegant side dish for a dinner party, this healthy salad is as nutritious as it is visually stunning. The addition of thinly sliced Granny Smith apples provides a sharp, crisp finish that complements the nutty elements. It is an excellent choice for those seeking a fresh, homemade dish that feels special without requiring hours of preparation in the kitchen.
