This vibrant vegan grain salad brings together a wonderful variety of textures and bright, zesty flavours. The nutty base of farro provides a satisfying chew, which is perfectly complemented by the crunch of toasted pistachios and the sweetness of golden raisins. A fresh ginger and lemon dressing ties everything together, offering a sharp contrast to the fragrant coriander, mint, and parsley.
Ideal as a healthy lunch or a sophisticated side dish for a weekend gathering, this herb-heavy salad is as nutritious as it is delicious. You can easily prepare the grains a day in advance and store them in the fridge, making it a brilliant option for stress-free meal prep.
