Ingredients for Garlic-chile vinegar

  • 7 red or green thai chiles

  • 8 garlic cloves, thinly sliced

  • 1 piece (4 cm) ginger, peeled, thinly sliced

  • 480 ml distilled white vinegar

  • 15 g sugar

  • 9 g kosher salt

  • 1 heatproof 1-litre jar

How to make Garlic-chile vinegar

  1. Place the chiles, garlic, and ginger into a clean jar.

  2. In a medium saucepan, combine the vinegar, sugar, and salt. Bring to a boil, stirring until the sugar and salt have dissolved.

  3. Pour the hot brine over the chiles, garlic, and ginger in the jar. Allow it to cool for 30 minutes at room temperature.

  4. Once cooled, cover the jar and place it in the fridge. Chill for at least 4 hours before using.

  5. For best flavour, prepare the garlic-chile vinegar up to 4 weeks in advance and keep it refrigerated.
