Golden Beet Carpaccio

This elegant golden beetroot carpaccio is a vibrant, plant-based starter that celebrates the natural sweetness of earthy root vegetables. By roasting the beetroot whole in their skins, you lock in their honeyed flavour and achieve a butter-soft texture that contrasts beautifully with the crisp garnish. It is a sophisticated vegan dish that brings a burst of sunshine to the table, making it a wonderful choice for seasonal entertaining or a light lunch.

Technique is key here, as chilling the beetroot before slicing allows you to achieve the characteristic paper-thin rounds. Topped with a piquant dressing of capers, red onion, and fresh chives, the dish is finished with a mound of peppery baby rocket for a clean, peppery bite. Serve this colourful salad with some crusty sourdough to soak up the high-quality extra-virgin olive oil.
