Ingredients for Hemp milk chai

  • 60 g hemp seeds

  • 10 ml chlorella powder

  • 5 ml reishi or cordyceps powder

  • 1 g ground cardamom

  • 2 cinnamon sticks (3-inch)

  • 40 g ginger, peeled, finely grated

  • 16 cardamom pods

  • very small pinch kosher salt

  • 4 bags strong black tea

  • 45 ml pure maple syrup

How to make Hemp milk chai

  1. Purée the hemp seeds with 750 ml of cold water in a blender until very smooth. Strain the mixture through a fine-mesh sieve into an airtight container.

  2. Mix the chlorella, reishi, and cardamom together in a small bowl.

  3. In a large saucepan, combine the cinnamon sticks, ginger, cardamom pods, salt, and 500 ml of water. Bring to a boil over medium-high heat.

  4. Reduce the heat to low, cover the saucepan, and simmer for 10–15 minutes until very fragrant.

  5. Remove from the heat and add the tea. Cover and let it sit for 5 minutes.

  6. Strain the chai mixture through a fine-mesh sieve into a clean saucepan.

  7. Stir in the maple syrup and 500 ml of hemp milk (reserve the remaining milk for another use). Cook over medium heat, whisking if the milk separates, just until hot.

  8. Divide the chai among mugs and top with superdust.

  9. Prepare the hemp milk up to 5 days in advance. Cover and chill until needed.
