This honeydew, cucumber and mint soda is the ultimate botanical refresher for warm summer afternoons. This vibrant vegan drink combines the delicate sweetness of ripe melon with the crisp, cooling notes of cucumber. By straining the fruit base without pressing the solids, you create a beautifully clear, elegant syrup that feels far more sophisticated than your average shop-bought soft drink.
Perfect as a non-alcoholic option for garden parties or a healthy alternative to sugary fizzy drinks, this recipe focuses on fresh, seasonal ingredients and natural flavours. The addition of zesty lime juice balances the honeyed notes of the melon, while the sparkling club soda provides a crisp finish. For the best results, ensure your fruit is well-chilled before you begin blending.
