Ingredients for Roasted cauliflower with sesame
1 head cauliflower, broken by hand into florets
60 ml extra-virgin olive oil
10 g salt
5 g ground coriander
5 g dried oregano
freshly ground black pepper, to taste
30 g tahini
15 g white miso
10 ml red wine vinegar
22 ml water
30 g toasted white sesame seeds
How to make Roasted cauliflower with sesame
Preheat the oven to 230°C (fan) or 240°C (conventional).
In a large mixing bowl, combine the cauliflower florets, oil, salt, coriander, oregano, and pepper. Toss well to ensure the cauliflower is evenly coated with the oil and spices.
Transfer the seasoned cauliflower to a baking tray and arrange in a single layer, leaving space between the pieces.
Roast the cauliflower in the oven for 20 minutes, turning the tray and lightly tossing the pieces halfway through until golden.
While the cauliflower roasts, whisk together the tahini, miso, vinegar, and 22.5 ml of water in a small mixing bowl until smooth.
Once the cauliflower is cooked, remove it from the oven and transfer it to a mixing bowl. Toss with the sauce and sesame seeds to coat evenly.
