Ingredients for Shaved radish salad with walnuts and mint
30 g walnuts
240 g thinly sliced mixed radishes
kosher salt, freshly ground pepper
60 ml basic lemon vinaigrette
How to make Shaved radish salad with walnuts and mint
Preheat the oven to 180°C (conventional) or 160°C (fan).
Toast the walnuts on a baking tray, tossing once, for 8–10 minutes or until golden brown.
Allow the walnuts to cool, then crush them with the flat side of a chef’s knife.
Arrange the radishes on a plate.
Lightly season the radishes with salt and pepper, then drizzle with vinaigrette.
Top with the crushed walnuts and fresh mint.
