Smashed Cucumber Salad with Lemon and Celery Salt

This vibrant smashed cucumber salad is a refreshing vegan side dish that brings a bright, zesty crunch to any table. By gently bruising the cucumbers before tearing them into pieces, you create more surface area and crannies for the dressing to cling to, resulting in a much deeper flavour than a standard sliced salad. The combination of fresh lemon and the distinct, savoury note of celery salt makes this a sophisticated yet incredibly simple addition to your repertoire.

Ideal for summer lunches or as a crisp accompaniment to spicy dishes, this healthy salad relies on just a few high-quality ingredients. Allowing the cucumbers to sit with a little salt ensures they stay beautifully crisp rather than watery, while the extra-virgin olive oil provides a silky finish. Serve it immediately while the textures are at their best for a light, hydrating treat.

Meanwhile, whisk lemon zest, lemon juice, oil, and 1/4 teaspoons celery salt in a medium bowl to combine; season dressing with salt.
