Smashed Fingerlings with Jalapeños

This vibrant vegan side dish elevates the humble roast potato into something truly spectacular. By oven-roasting delicious fingerling potatoes until they are tender and then lightly crushing them, you create extra surface area for maximum crispiness. The heat from the oven mellows the earthy flavours, providing the perfect base for a punchy, sharp dressing that cuts through the richness of the olive oil.

Featuring a zingy blend of sherry vinegar and wholegrain mustard, these smashed potatoes are finished with fresh parsley and sliced jalapeños for a bright, spicy kick. It is a fantastic plant-based accompaniment to grilled proteins or as part of a larger sharing spread. Not only is this recipe naturally dairy-free, but it also offers a sophisticated twist on classic potato salad for your next Sunday lunch.
