This vibrant watermelon salad with radishes and mint is the quintessential summer dish, offering a refreshing balance of sweet, savoury, and peppery notes. The combination of chilled, juicy fruit with the sharp crunch of radishes and red onion provides a sophisticated contrast that is incredibly hydrating on a warm afternoon. It is a stunning visual centrepiece for any seasonal spread, with the bright pink flesh of the melon complemented by the fresh green of the torn mint leaves.
As a naturally vegan and gluten-free option, this light salad is a versatile addition to any garden party or barbecue. The simple vinaigrette enhances the natural sweetness of the fruit while the black pepper adds a subtle heat. Serve it alongside grilled vegetables or as a palate-cleanser between courses for a healthy, homemade side that takes mere minutes to assemble.
