Rocket and Radicchio with Feta and Dates

This vibrant rocket and radicchio salad is a masterclass in balancing contrasting flavours and textures. The peppery bite of baby rocket and the pleasing bitterness of radicchio are perfectly offset by the honey-like sweetness of sliced dates and the salty tang of crumbled feta. Tied together with a bright, zingy lemon and extra-virgin olive oil dressing, it acts as a sophisticated starter or a refreshing side dish for Mediterranean-inspired meals.

As a versatile vegetarian dish, this salad is as nutritious as it is beautiful on the plate. The combination of colourful leaves provides a wealth of antioxidants, while the dates offer a natural energy boost. Serve it alongside roasted lamb or grilled halloumi for a simple, healthy dinner that feels truly special.
