This simple Asiago and black pepper frico recipe transforms a handful of ingredients into incredibly crisp, golden wafers. These savoury Italian-style cheese crisps offer a sophisticated bite, with the sharp, nutty flavour of the Asiago balanced by the gentle heat of black pepper and a pinch of cayenne. They are naturally gluten-free and provide a satisfyingly brittle texture that makes them an irresistible snack to serve with evening drinks.
As a versatile vegetarian garnish, these fricos can be used to add a salty crunch to creamy soups or garden salads. This homemade version is far superior to shop-bought alternatives and can be prepared a day in advance for easy entertaining. Simply store them in an airtight container at room temperature to maintain their delicate, crunchy finish.

Ingredients for Asiago-Pepper Frico
120g (packed) shredded Asiago cheese or Parmesan, Romano, and Asiago cheese blend (about 110g )
1/2 teaspoons freshly ground black pepper
1/8 teaspoons cayenne pepper
How to make Asiago-Pepper Frico
Preheat oven to 177°C. Line 2 large baking sheets with parchment paper. Mix cheese, black pepper, and cayenne in small bowl. Spoon cheese mixture by generous tablespoonfuls in 6 mounds on each prepared baking sheet, spacing 3 inches apart. Using fingers, spread each mound evenly to 2 1/2-inch round.
Bake frico until deep golden and crisp, about 12 minutes. Remove from oven. Slide parchment with frico onto work surface and cool 5 minutes. Slide thin metal spatula under frico to loosen. Cool frico completely on parchment.
Frico can be prepared 1 day ahead. Store airtight in single layer at room temperature.
