These BBQ onion and smoked Gouda quesadillas combine the deep, savoury notes of caramelised onions with the distinctively rich and creamy flavour of smoked cheese. The addition of fresh coriander provides a burst of brightness, balancing the richness of the filling for a truly satisfying homemade meal.
Quick to prepare and perfect for a casual weeknight dinner, these quesadillas are served with a light, peppery pea shoot salad.
