Ingredients for Blissed-out crispy cheesy broccoli gratin

  • 570 g broccoli florets, leaving about 2.5 cm of the stem attached

  • 30 ml extra-virgin olive oil

  • 5 ml kosher salt

  • 30 g unsalted butter

  • 2 garlic cloves, minced

  • 40 g panko breadcrumbs

  • 90 g grated cheddar cheese

  • 25 g finely grated Parmigiano Reggiano cheese

How to make Blissed-out crispy cheesy broccoli gratin

  1. Adjust one oven rack to the upper-middle position and another to the middle position. Preheat the oven to 200°C (fan oven 180°C). Place a rimmed baking tray on the middle rack.

  2. Toss the broccoli florets with the olive oil and salt in a medium bowl. Turn the broccoli out onto the hot baking tray (it should sizzle!) and roast for 15 minutes, or until the bottoms of the florets are nicely browned.

  3. Meanwhile, combine the butter and garlic in a ramekin and place it in the oven until the butter melts, about 5 minutes. Alternatively, combine them in a microwave-safe bowl and microwave on high in 15-second intervals, swirling between each, until the butter melts, taking 45 seconds to 1 minute.

  4. Place the breadcrumbs in a medium bowl, add the melted butter-garlic mixture, and toss with a fork. Stir in the Cheddar and Parmigiano Reggiano cheeses until well combined.

  5. Remove the baking tray from the oven and sprinkle the broccoli with the cheesy breadcrumb mixture. Turn the grill to high and return the baking tray to the upper rack. Grill for 1 to 2 minutes, or until the cheese is melted and browned, keeping a close eye to prevent burning.

  6. Remove from the oven, transfer to a serving platter, and ensure to scrape up all the crispy, crunchy cheesy bits. Serve immediately.
