This vibrant vegetarian dish combines the smoky sweetness of caramelised aubergine with a cooling yet spicy harissa yoghurt base. By using an air fryer, the aubergine achieves a beautifully charred exterior and a melt-in-the-mouth texture without the need for excessive oil. It is a fantastic example of how simple ingredients like garlic, honey and North African spices can transform a humble vegetable into a sophisticated small plate or savoury side dish.
Perfect for a quick midweek supper or as part of a larger Middle Eastern-inspired spread, this recipe is as nutritious as it is flavourful. The contrast between the warm, spiced aubergine and the chilled, zesty yoghurt makes it a refreshing choice for any season. Serve it alongside warm flatbreads to scoop up every bit of the savoury sauce.
