Ingredients for Creamed dried sweet corn with onion and chives
300 g dried sweet corn
1,200 ml full-fat milk
480 ml double cream
60 g unsalted butter, softened
75 g finely chopped onion, peeled, chopped
15 ml kosher salt, plus more
15 g caster sugar
freshly ground black pepper
sliced chives (for serving)
How to make Creamed dried sweet corn with onion and chives
Stir together the corn, milk, and cream in a large bowl. Cover with cling film and chill for at least 4 hours, or overnight.
Melt the butter in a large pot over medium heat. Add the onion and a pinch of salt, and cook, stirring often, until the onion is translucent and just beginning to turn golden, about 6 minutes.
Add the chilled corn mixture, sugar, and 1 tablespoon of salt to the pot. Increase the heat to medium-high and cook, stirring frequently, until the mixture comes to a boil.
Reduce the heat to low and simmer, stirring occasionally, until the creamed corn is thickened, about 30 minutes.
Season to taste with salt and pepper. Top with chopped chives before serving.
