Ingredients for Creamy mac and cheese

  • 375 g whole wheat elbow pasta

  • 15 g unsalted butter, softened

  • 15 g plain flour

  • 720 ml unsweetened almond milk

  • 50 g grated sharp cheddar cheese

How to make Creamy mac and cheese

  1. Bring a large saucepan of water to a boil.  

  2. Add the pasta and cook until al dente, following the package directions.  

  3. Drain the pasta and set aside.  

  4. In the same pan, melt the butter over medium-low heat.  

  5. Add the flour and mix with a wooden spoon, stirring continuously for about 5 minutes, or until you have a lightly browned paste (this is the roux).  

  6. Pour in 240 ml of the almond milk and whisk well to break up any lumps.  

  7. Stir in the remaining 480 ml of almond milk and increase the heat to medium-high.  

  8. Cook, stirring continuously and occasionally scraping the bottom of the pan with the wooden spoon, until the mixture has thickened and coats the spoon without transparency.  

  9. Turn off the heat and stir in the pasta until it is well coated in the sauce.  

  10. Add the cheese and mix until it has melted and is evenly distributed.  

  11. Serve with a crunchy green salad.
