Creamy Mashed Cauliflower "Potatoes"

This creamy mashed cauliflower is a sophisticated and lighter alternative to traditional mashed potatoes. By steaming the cauliflower with whole garlic cloves, the vegetable takes on a mellow, savoury depth that pairs beautifully with the richness of butter and milk. It is an excellent vegetarian side dish for those looking to include more brassicas in their diet without sacrificing the comforting, velvet-like texture of a classic mash.

Quick to prepare and naturally gluten-free, this versatile dish complements everything from Sunday roasts to spicy stews. It is particularly useful for midweek meals as it can be made up to two days in advance and kept in the fridge. Simply reheat and finish with a scattering of fresh chives for a bright, peppery lift that completes the plate.
