Ingredients for Golden yellow corn bread or corn muffins

  • 120 g indian head yellow corn meal

  • 120 g plain flour

  • 50 g caster sugar

  • 5 ml salt

  • 15 g baking powder

  • 60 ml oil

  • 240 ml full-fat milk

  • 1 egg, beaten

How to make Golden yellow corn bread or corn muffins

  1. Preheat the oven to 220°C (200°C for fan oven).

  2. In a bowl, combine the cornmeal, flour, sugar, baking powder, and salt.

  3. In a separate bowl, whisk together the oil, eggs, and milk, then add this mixture to the dry ingredients. Mix until the batter is uniform.

  4. Grease a 23 cm x 23 cm x 5 cm (9 in x 9 in x 2 in) baking pan, then pour in the cornmeal batter. Bake for 20–25 minutes, or until golden.

  5. Alternatively, grease or line muffin tins and fill them about two-thirds full with the cornmeal batter. Bake for 15–20 minutes, or until a skewer comes out clean. This recipe makes 12 muffins.

  6. For a sweeter, moister cornbread or muffin, use 160 ml of milk, 100 g of sugar, 120 ml of oil, and 2 eggs.

  7. Reduce the oven temperature to 200°C (180°C for fan oven) and bake for 20–25 minutes.
