Ingredients for Grilled corn on the cob with salt-and-pepper butter
115 g unsalted butter, room temperature
5 ml kosher salt
5 ml freshly ground black pepper
6 ears of corn
How to make Grilled corn on the cob with salt-and-pepper butter
Preheat the grill to medium-high heat.
In a small bowl, mix together the butter, salt, and pepper, then set aside.
Carefully pull back the husk from each ear of corn without removing it completely.
Remove the silk from the corn, then pull the husk back into place. This will protect the corn from direct flames while allowing smoke to infuse and some charring to occur.
Grill the corn, turning occasionally, for about 10 minutes or until slightly charred and cooked through.
Transfer the grilled corn to a large platter, pull back the husks, and spread the reserved butter over the corn.
Do Ahead: Prepare the butter up to 1 day in advance. Cover and chill, then bring to room temperature before spreading over the corn.
