Ingredients for Jammy eggs and feta flatbreads with herbs

  • 4 large eggs

  • 30 g feta, crumbled

  • 30 ml fresh lemon juice

  • 30 ml extra-virgin olive oil

  • kosher salt, freshly ground black pepper

  • palmful of chopped tender herbs (such as tarragon and/or chives)

  • 2 warm flatbreads or slices of toast

How to make Jammy eggs and feta flatbreads with herbs

  1. Bring a small saucepan of water to a gentle boil. Carefully lower the eggs into the water and cook for 7 minutes.  

  2. Transfer the eggs to a bowl of ice water and let them sit until cool enough to handle. Drain the eggs and peel them, then tear them into large pieces.  

  3. In a small bowl, coarsely mash the feta cheese with the lemon juice and oil, then season with salt and pepper.  

  4. Gently fold the pieces of egg into the feta mixture.  

  5. Spoon the egg mixture over the flatbreads and top with fresh herbs.
