This elegant dish of marinated anchovies with seedy bread and butter is a masterclass in balancing bold flavours. By steeping high-quality oil-packed anchovies in sharp white vinegar and fresh lemon juice, you transform a store-cupboard staple into a vibrant, zesty appetiser. The addition of sliced chillies provides a gentle heat that cuts through the rich oils, creating a sophisticated starter or a salty snack to enjoy with a cold glass of white wine.
Traditionally served as a simple sharing plate, this recipe relies on the contrast between the punchy, acidic fish and the creamy, unsalted butter. Using a nutty, seedy wholemeal bread provides a sturdy base and a pleasant crunch. It is an ideal choice for effortless weekend entertaining or as part of a Mediterranean-style tapas spread, offering a nutritious hit of healthy fats and punchy, savoury notes.
