Ingredients for Peaches and tomatoes with burrata and hot sauce
30 ml extra-virgin olive oil
30 ml mild hot sauce (optional)
10 ml unseasoned rice vinegar
10 ml honey
kosher salt, to taste
3 ripe peaches or nectarines, cut into wedges
2 large ripe tomatoes or 450 g mixed tomatoes, sliced
225 g ball burrata or fresh mozzarella, torn into large pieces
tarragon sprigs (for serving)
flaky sea salt
How to make Peaches and tomatoes with burrata and hot sauce
Whisk together the oil, hot sauce, vinegar, and honey in a small bowl until the honey is dissolved. Season with kosher salt.
In a medium bowl, toss the peaches, tomatoes, and half of the dressing together. Allow to sit for 5 minutes.
Transfer the fruit salad to a serving platter.
Top the salad with the burrata and drizzle with the remaining dressing.
Scatter a few torn tarragon sprigs over the top and season with sea salt.
