Ingredients for Simplest kale salad
90 ml extra-virgin olive oil
90 ml fresh lemon juice
15 ml honey
5 ml kosher salt
450 g curly kale, rinsed, ribs and stems removed, leaves torn into 2.5–4 cm pieces
60 g parmesan, finely grated (about 120 g), plus more for serving
How to make Simplest kale salad
Whisk together the oil, lemon juice, honey, and salt in a large bowl.
Add the kale and toss to coat the leaves evenly.
Massage the kale with your hands until the leaves are shiny and dark green.
Toss in the Parmesan cheese until well combined.
Transfer the salad to a serving platter.
Top with additional Parmesan cheese before serving.
