Ingredients for Tomato, basil, avocado and feta stacks
2 avocados, halved, pitted, sliced
salt and freshly cracked pepper to taste
2 red heirloom tomatoes, thinly sliced
30 ml extra-virgin olive oil
10 ml balsamic vinegar
115 g feta cheese, crumbled
30 g fresh basil leaves
How to make Tomato, basil, avocado and feta stacks
Cut the avocados in half crosswise using a small knife. Remove the pits.
Carefully scoop out the avocado flesh from each half using a spoon, keeping it in one piece. Cut the flesh into thin slices crosswise.
Lightly sprinkle the tomatoes and avocado with salt and pepper, then drizzle with olive oil and balsamic vinegar.
Cut the feta into thin slices.
Layer the tomatoes, avocado, feta, and basil in stacks on plates.
