This homemade toasted coconut and nut granola is a versatile addition to your breakfast routine. Unlike shop-bought versions that can be overly sweet, this recipe balances the floral sweetness of agave syrup with a hint of cinnamon and sea salt. The addition of egg white is the secret to achieving those coveted crunchy clusters, while the mix of sesame seeds and coconut shavings provides a varied, toasted texture that pairs beautifully with fresh fruit or dairy-free yoghurt.
As a dairy-free pantry staple, this granola is perfect for batch cooking. It keeps remarkably well for up to two weeks, making it an ideal choice for busy weekday mornings or as a thoughtful homemade gift. You can easily customise the flavour by swapping the dried cherries for apricots or raisins, ensuring it remains a staple favourite in your kitchen all year round.
