This classic fish ceviche is the ultimate expression of Peruvian coastal cooking. Using fresh white fish fillets cured in a vibrant citrus marinade, this dairy-free dish relies on the quality of its ingredients and the perfect balance of heat from the limo chilli. The addition of ice cubes during the preparation ensures the fish remains remarkably cold and firm, creating a refreshing contrast against the zingy lemon juice and fragrant coriander.
As a healthy, high-protein starter or light lunch, this recipe is incredibly simple to assemble at home. Traditionally served with sweet potato and corn, these starchy accompaniments provide a mellow sweetness that complements the sharp, savoury notes of the marinade. It is an ideal choice for summer entertaining or a sophisticated weekend meal that requires no heat, just a little patience and the freshest catch available.
