This refreshing chicken salad with grapes and walnuts is a sophisticated take on a classic deli favourite. By gently poaching the chicken tenders in a savoury broth, the meat remains exceptionally tender and moist, providing the perfect base for the crisp textures of the fruit and nuts. The addition of salty capers and tangy Dijon mustard provides a sharp contrast to the sweetness of the seedless grapes, creating a balanced and vibrant flavour profile.
As a dairy-free option that uses a light yogurt and mayonnaise dressing, this recipe is ideal for a healthy lunch or an elegant summer picnic. Serve it tucked into a crusty baguette, piled onto a bed of mixed salad leaves, or enjoyed simply on its own for a protein-rich meal that feels both indulgent and nourishing.
