Cold Avocado Soup

This chilled avocado soup is a sophisticated and refreshing choice for warm summer days. Combining the buttery texture of ripe avocados with a subtle hint of dry Sherry and a touch of heat, it offers a beautifully balanced flavour profile that is both light and satisfying. The vibrant green colour makes it a stunning centrepiece for a seasonal lunch or an elegant starter for a garden dinner party.

As a dairy-free friendly option, this versatile soup can easily be adapted by using a plant-based milk and omitting the soured cream garnish. It is a fantastic make-ahead dish, as the flavours develop beautifully while chilling in the fridge. Serve it in chilled bowls with plenty of fresh chives for a cool, nutritious meal that requires no time over a hot hob.
