Crisp Winter Lettuces with Warm Sweet-and-Sharp Dressing

This seasonal salad of crisp winter lettuces with warm sweet-and-sharp dressing offers a sophisticated balance of textures and flavours. A combination of peppery watercress, robust romaine, and delicate butterhead leaves provides the perfect base for the rich, savoury additions. The heat from the dressing gently wilts the greens, while the acidity of the cider vinegar cuts through the saltiness of the bacon, creating a beautifully rounded dairy-free starter or side dish.

Perfect for a weekend lunch or as an elegant accompaniment to a roasted main course, this dish is versatile and easy to assemble. The syrupy, warm dressing is the star of the show, transforming simple garden ingredients into something truly indulgent. For the best results, use high-quality shop-bought bacon and served immediately while the dressing is still hot and the leaves remain vibrant and crisp.
