This aromatic wild mushroom soup is a celebration of earthy flavours and velvety textures. By combining chestnut mushrooms with delicate oyster and woody shiitake varieties, the dish gains a sophisticated depth that elevates it above a standard cream of mushroom. A splash of brandy and fresh thyme add warmth and a subtle herbal note, creating a comforting bowlful that is perfect for a chilly autumn afternoon or as an elegant starter for a dinner party.
As a dairy-free option that relies on rich beef stock and sautéed onions for body, this recipe is a nutritious and hearty choice for those seeking a lighter alternative to cream-based soups. The combination of mushrooms provides a fantastic source of plant-based umami, making it incredibly satisfying. Serve it simply with a thick slice of toasted sourdough to soak up every last drop of the savoury broth.
