Jumbo Prawns

These marinated jumbo prawns offer a bright and punchy flavour profile that perfectly balances salty fish sauce with zesty lemon and a hint of sweetness. By marinating the shellfish for a few hours, the prawns absorb the aromatic dressing, ensuring every bite is succulent and deeply seasoned. This simple preparation method highlights the natural sweetness of the seafood while the high heat of the grill adds a delicate charred finish.

As a versatile dairy-free dish, these prawns are an excellent choice for a sophisticated starter or a protein-rich addition to a summer salad. Because they are served at room temperature, they are particularly well-suited for alfresco dining, picnics, or prepare-ahead entertaining. Simply pack them into a chilled container and enjoy a healthy, restaurant-quality seafood snack wherever you are.

Ingredients for Jumbo Prawns

  • 18 jumbo-size prawns (about 1.0kg), peeled and deveined along the curve of the back, tails left on

  • 60ml fish sauce (an Asian condiment)

  • 2 tablespoons olive oil

  • 2 tablespoons sugar

  • 2 tablespoons finely grated lemon zest

How to make Jumbo Prawns

Rinse prawns in cold water, drain, and pat dry.

Combine the fish sauce, olive oil, sugar, and grated lemon zest in a bowl. Add the prawns; coat well. Let rest, covered, in the refrigerator for 2 hours, tossing twice.

Cover a rimmed baking sheet with foil. Arrange half the prawns on the sheet, leaving a little space between each. Grill 3 inches from the heat source until just cooked, 3 minutes per side. Repeat with the rest of the prawns. Then cool to room temperature. Pack up in a portable container and enjoy!
