This vibrant rib-eye steak with chickpea and green bean salad is a fantastic option for a protein-rich, dairy-free dinner. The steaks are rubbed with a smoky blend of mesquite and chilli, providing a deep, savoury crust that contrasts beautifully with the zesty side dish. Using store-cupboard staples like tinned chickpeas ensures this meal is as convenient as it is delicious, while fresh coriander and lemon peel bring a bright, Mediterranean-inspired finish to every bite.
Ideal for a quick weeknight supper or a relaxed weekend lunch, this dish focuses on fresh ingredients and bold seasonings. The salad provides a satisfying crunch and plenty of fibre, making it a wholesome alternative to traditional steak and chips. Serve the sliced beef warm over the dressed beans to allow the juices to mingle with the lemon and herb vinaigrette for maximum flavour.
