This vibrant prawn and mango salad is a celebration of fresh, tropical flavours, combining succulent grilled prawns with the honeyed sweetness of ripe mango. The addition of zesty lime juice and fragrant coriander cuts through the sweetness, whilst the red onion and pepper provide a satisfying crunch. It is a colourful, light dish that works beautifully as a sophisticated starter or a refreshing main course on a warm afternoon.
As a naturally dairy-free and gluten-free option, this nutritious salad is an excellent choice for those seeking a healthy yet flavourful meal. The balance of protein and vitamin-rich fruit makes it as nourishing as it is delicious. For the best results, ensure your mangoes are perfectly ripe and juicy, and serve alongside some crusty bread or enjoy it exactly as it is.
