This aromatic Thai green chicken curry is a staple of dairy-free cooking, offering a perfect balance of creamy coconut milk, vibrant lime, and fragrant basil. Unlike heavier cream-based dishes, this recipe relies on authentic Southeast Asian flavours and lean chicken breast for a lighter, more refreshing finish. The gentle heat from the green curry paste complements the sweetness of the red peppers, making it an ideal choice for those seeking a nutritious yet comforting dinner that captures the essence of homemade takeaway food.
Perfect for a busy weeknight, this quick curry takes very little time to prepare and cook. It is naturally gluten-free and dairy-free, catering to various dietary requirements without compromising on depth of flavour. Serve it alongside a steaming bowl of jasmine rice or rice noodles for a complete, wholesome meal that the whole family will enjoy. The addition of fresh lime wedges provides a zingy citrus lift that cuts through the richness of the coconut for a professional-tasting result.
