Ingredients for Winter fruit kefir salad

  • 600 ml organic coconut-flavoured full-fat milk kefir

  • 1 bunch mint, ½ roughly chopped, ½ picked leaves

  • Juice of 2 limes

  • 120 g bite-size cantaloupe pieces

  • 120 g bite-size honeydew pieces

  • 75 g finely diced persimmon

  • Seeds (arils) of 1 medium pomegranate

  • 2 medium kiwi, peeled, sliced

  • 1 medium mango, pitted, peeled, diced

  • 60 ml toasted sesame oil

  • Pinch of Maldon sea salt

How to make Winter fruit kefir salad

  1. In a bowl, mix together the kefir, chopped mint, and lime juice until combined.

  2. Pour the kefir mixture onto a large platter with a slight lip.

  3. In the same bowl, combine all of the fruit with 60 ml of the sesame oil and any remaining kefir clinging to the bowl.

  4. Loosely arrange the fruit on top of the kefir mixture.

  5. Drizzle the fruit with the remaining 30 ml of sesame oil, then sprinkle with the picked mint leaves and evenly with the salt.
