These vibrant Buffalo chicken dippers offer a lighter, diabetes-friendly take on the classic American bar snack. By grilling the chicken strips on skewers and using a fat-free blue cheese dressing, you can enjoy all the bold, spicy flavours of the original dish without the heavy calories from deep-frying. The cornflour-based glaze provides a satisfyingly sticky texture that clings to the succulent chicken, perfectly balanced by the cooling tang of the homemade blue cheese dip.
Ideal as a healthy midweek dinner or a sociable party platter, this recipe is packed with lean protein and served with crunchy carrot and celery sticks for added fibre. The clever use of skewers makes them easy to turn on the grill, ensuring the chicken stays tender and moist. For the best results, serve them while the chicken is piping hot to contrast with the crisp, chilled vegetable crudités.

Ingredients for Buffalo Chicken Dippers
12 wooden skewers
Vegetable oil cooking spray
1 tablespoon cornflour
80ml hot sauce, divided
450g chicken tenders, cut into strips
60g crumbled blue cheese
60g fat-free blue cheese dressing
4 carrots, cut into sticks
4 celery stalks, cut into sticks
How to make Buffalo Chicken Dippers
Soak skewers in water 15 minutes. Heat grill; coat a grill pan with cooking spray. In a bowl, stir cornflour into 1 tablespoon hot sauce until smooth; stir in remaining hot sauce. Add chicken; toss to coat. Thread chicken lengthwise on skewers; reserve remaining hot sauce mixture. Place chicken in pan so skewers hang off edge; cover exposed sticks with aluminum foil. Grill 4 minutes. Turn chicken; brush with remaining sauce. Grill until chicken is cooked through, 4 to 5 minutes. In another bowl, combine blue cheese and dressing. Serve chicken with vegetable sticks and blue cheese dipping sauce.
