This vibrant citrus-marinated chicken thighs recipe offers a bright and savoury flavour profile that perfectly balances zesty lime and orange with the richness of reduced-sodium soy sauce. Using skin-on, bone-in thighs ensures the meat remains succulent and tender under the grill, while the fresh coriander and garlic marinade provides a deep, aromatic base. It is a refreshing alternative to traditional roasts, bringing a burst of sunshine to your dinner table regardless of the season.
As a diabetes-friendly main course, this dish focuses on high-quality protein and fresh aromatics rather than added sugars. The combination of citrus acidity and savoury soy creates a sophisticated glaze without the need for heavy sauces. Serve these chicken thighs with a crisp green salad or steamed seasonal vegetables for a light, nutritious meal that the whole family will enjoy.

Ingredients for Citrus-Marinated Chicken Thighs
1 bunch spring onions, thinly sliced
1/2 bunch coriander, leaves and tender stems only
2 garlic cloves, chopped
1 teaspoon finely grated lime zest
1 teaspoon finely grated orange zest
60ml fresh lime juice
60ml fresh orange juice
60ml reduced-sodium soy sauce
2 tablespoons vegetable oil
1 tablespoon kosher salt
900g skin-on, bone-in chicken thighs
How to make Citrus-Marinated Chicken Thighs
Set aside 1/4 cup sliced spring onions. Pulse coriander, garlic, citrus zests, citrus juices, soy sauce, oil, salt, and remaining spring onions in a food processor or blender until a coarse purée forms. Set aside 60ml marinade; place remaining marinade in a large resealable plastic bag. Add chicken, seal bag, and turn to coat. Chill at least 20 minutes.
Preheat grill. Remove chicken from marinade and place, skin side down, on a foil-lined broilerproof baking sheet; discard marinade. Grill chicken until lightly browned, about 5 minutes. Turn; continue to grill until cooked through and an instantread thermometer inserted into the thickest part of thigh registers 74°C, 12-15 minutes longer. Serve chicken with reserved marinade and spring onions.
DO AHEAD: Chicken can be marinated 2 hours ahead. Keep chilled.
