These vibrant Greek turkey burgers offer a fresh, Mediterranean twist on a classic midweek favourite. By using lean minced turkey breast and packing the patties with finely chopped spinach, salty olives, and zesty lemon, you create a moisture-rich burger that is both nutritious and full of flavour. The addition of dried oregano and fresh mint provides an authentic herbal lift that pairs perfectly with the poultry, ensuring every bite is seasoned to perfection.
As a diabetes-friendly main course, this recipe swaps traditional bread buns for crisp butter lettuce wraps to keep the carbohydrate content low without sacrificing crunch. It is an excellent choice for a healthy family dinner or a quick weekend lunch. Customise your plate with traditional toppings like sliced cucumber, red onion, or a dollop of basil pesto for a truly satisfying homemade meal.

But don’t overmix or the meat with become tough. Divide the mixture into 6 equal portions and shape them into burgers.

If you like, serve each burger on a large piece of butter lettuce and top them with any of the optional ingredients.
