Spiced Lamb Chops

These aromatic spiced lamb chops offer a sophisticated balance of heat and fragrance, making them a standout choice for a healthy evening meal. By toasting whole spices like cumin, fennel and cloves before grinding, you release deep, smoky oils that infuse the meat with incredible flavour. This diabetes-friendly recipe relies on fresh ginger and a light yogurt marinade to tenderise the lamb rib chops, ensuring a succulent finish without the need for heavy sauces.

Ideal for a quick midweek dinner or a lighter weekend roast alternative, this dish is naturally high in protein and low in sugar. The addition of tangy pickled red onions provides a sharp, refreshing contrast to the earthy spices, while fresh mint sprigs add a cooling touch. Serve alongside a crisp green salad or roasted Mediterranean vegetables for a complete, nutritionally balanced plate.
