  • 2 tablespoons olive oil

  • 1 (2-pound) T-bone steak (about 1 inch thick), trimmed and at room temperature

  • Sea salt and cracked black pepper

  • 6 sprigs thyme

  • 6 cloves garlic, unpeeled
