Viet-Mex Fajita Rolls

These Viet-Mex fajita rolls offer a vibrant fusion of flavours, combining the smoky appeal of classic Mexican fajitas with the fresh, crunchy textures of a Vietnamese summer roll. Replacing traditional flour tortillas with crisp romaine lettuce leaves makes this a fantastic diabetes-friendly option that is naturally low in carbohydrates but high in satisfaction. The contrast between the warm grilled beef and the cold, raw vegetables provides a wonderful sensory experience for any midweek meal.

Perfect for a social dinner, this interactive dish allows everyone to customise their own wraps at the table. The addition of jicama and roasted peanuts adds an authentic crunch, while the fresh lime juice cuts through the richness of the avocado. Serve these colourful wraps with your favourite spicy salsa for a light, healthy dinner that feels like a genuine treat.
