Ingredients for Sunday stash marinara sauce
120 ml extra-virgin olive oil
2 sweet onions, peeled, very coarsely chopped
6 garlic cloves, peeled
10 ml dried oregano
1120 g whole peeled tomatoes
20 g kosher salt, plus more
8 g freshly ground black pepper, plus more
How to make Sunday stash marinara sauce
Heat oil in a large pot or casserole dish over medium heat.
Cook the onion and garlic, stirring occasionally and taking care not to let them brown, until aromatic, about 3 minutes.
Add the oregano and stir to combine.
Using your hands, crush the tomatoes and add them to the pot along with their juices. Season with 4 teaspoons of salt and 1½ teaspoons of pepper.
Bring the mixture to a boil, then reduce the heat and simmer gently. Cook uncovered, stirring occasionally, until the sauce has reduced slightly, about 1 hour.
Remove from heat and blend the sauce with an immersion blender until smooth. Season with additional salt and pepper to taste.
Do Ahead: The sauce can be made up to 5 days in advance. Store it in an airtight container and refrigerate, or freeze for up to 6 months.
