Baked Prawns in Chipotle Sauce

This vibrant seafood dish features succulent prawns baked in a rich, smoky butter sauce. Infused with chipotle chillies in adobo, dry red wine and a hint of garlic, it offers a sophisticated balance of heat and depth. It is a fantastic option for those seeking a high-protein meal that feels indulgent yet remains incredibly simple to prepare, making it a reliable choice for a quick midweek supper or a relaxed weekend starter.

Preparing the prawns in their shells helps to retain moisture and sweetness during the short roasting time at a high temperature. Serve the dish straight from the oven with a warm baguette to soak up the spicy, savoury juices. It is an excellent source of lean protein and pairs wonderfully with a crisp green salad or steamed seasonal greens.
