Ingredients for Beef sliders with provolone and balsamic onions

  • 900 g minced beef (20% fat)

  • kosher salt, freshly ground pepper

  • 4 slices provolone piccante cheese, torn in half

  • 8 potato slider buns

  • 1 large red onion, very thinly sliced into rounds

  • 45 ml balsamic vinegar

  • 5 ml sugar

  • aioli or shop-bought mayonnaise (for serving)

How to make Beef sliders with provolone and balsamic onions

  1. Divide the minced beef into 8 equal portions, each weighing approximately 115 g.  

  2. Place one portion on a work surface and cup your hands around it, shaping it into a rounded mound.  

  3. Gently flatten the patty to a thickness of about 2 cm.  

  4. Season both sides with salt and pepper.  

  5. Repeat the shaping and seasoning process with the remaining portions of minced beef.  

  6. Preheat the grill to medium-high heat.  

  7. Grill the patties until lightly charred on the bottom, approximately 3 minutes.  

  8. Flip the patties and place a slice of cheese on top of each one.  

  9. Grill until the desired doneness is achieved and the cheese has melted, about 3 minutes for medium-rare.  

  10. Transfer the patties to a cutting board and let them rest for 5 minutes.  

  11. While the patties are resting, grill the buns, cut side down, until lightly charred around the edges, about 30 seconds.  

  12. In a medium bowl, toss the sliced onion with vinegar, sugar, and a pinch of salt, then let it sit for 5 minutes, squeezing the onions occasionally to soften them slightly.  

  13. Assemble the sliders by placing a patty on each bun, topping it with the marinated onions and a dollop of aioli.  

  14. If desired, the patties can be formed up to 6 hours in advance; cover and chill until needed.
