Ingredients for Blackened salmon with pineapple salsa
15 ml ground paprika
5 ml garlic granules
5 ml dried thyme
pinch ground cayenne
1 g ground black pepper
170 g salmon
coconut oil spray
60 g chopped fresh pineapple
60 g chopped pepper
1 jalapeño, deseeded, diced
75 g diced red onion
juice of 1 lime
pinch salt
How to make Blackened salmon with pineapple salsa
Preheat the oven to 190°C (fan) or 200°C (conventional).
In a bowl, combine the blackening seasoning by mixing together the paprika, garlic granules, thyme, cayenne, and black pepper.
Rub the seasoning onto all sides of the salmon.
Coat a baking tray with coconut oil spray, then place the seasoned salmon on the tray. Bake for 25–30 minutes, or until the salmon is firm but not dry.
While the salmon is baking, prepare the salsa by combining all the salsa ingredients in a bowl. Allow the flavours to meld at room temperature until the salmon is ready.
Once cooked, top the salmon with half of the salsa and reserve the remaining salsa in the fridge.
