These brothy heirloom beans with cream offer a sophisticated take on high-protein comfort food. By simmering a variety of dried beans in a savoury chicken stock infused with fresh thyme, you create a deep, complex base that feels far more indulgent than its simple ingredients suggest. The addition of double cream at the final stage transforms the cooking liquor into a velvet-like sauce, making this a truly soul-warming dish for a chilly evening.
Perfect as a standalone vegetarian-style lunch or a hearty side dish, this recipe is incredibly versatile and meal-prep friendly. The beans can be cooked up to three days in advance, allowing the flavours to develop further in the fridge. Serve in shallow bowls with crusty sourdough bread to soak up every drop of the luxurious, creamy broth.

How to make Brothy Heirloom Beans With Cream
Back to contentsBring beans, stock, and thyme sprigs to a gentle simmer in a medium pot over medium-high. Reduce heat to medium-low and simmer, partially covered, skimming any foam from surface, until beans are tender, 1–1 1/2 hours, depending on types. Discard thyme. Season with kosher salt and pepper, remove from heat, and let sit 30 minutes.
Return to a simmer; stir in cream. Season with more kosher salt and pepper if needed. Serve topped with thyme leaves and sea salt and drizzled with oil.
Beans can be cooked 3 days ahead. Let cool; cover and chill.
