Dill Chicken Paillards with Tomato-Dill Relish

These dill chicken paillards offer a light yet deeply flavourful option for a nutritious weekday meal. By flattening the chicken breasts into thin paillards, you ensure they cook quickly and evenly on the grill, resulting in a moist and tender texture that pairs beautifully with the herbaceous marinade. The combination of fragrant dill and grainy mustard provides a sophisticated Scandinavian-inspired profile that feels both fresh and satisfying.

This high-protein dish is an excellent choice for those seeking a lean, healthy dinner that doesn't compromise on taste. The vibrant tomato-dill relish adds a burst of acidity and sweetness, cutting through the savoury notes of the grilled poultry. Serve these paillards alongside a crisp green salad or some steamed new potatoes for a complete, well-balanced meal that is as simple to prepare as it is elegant to serve.
