Ingredients for Greek turkey burgers

  • 900 g minced turkey breast (93% lean)

  • 120 g fresh spinach leaves, packed, finely chopped

  • 35 g pitted black olives, finely chopped

  • zest of 1 lemon

  • 30 g red onion, finely chopped

  • 15 g fresh mint or parsley, finely chopped

  • 5 ml garlic powder, or 3 fresh garlic cloves, finely chopped

  • 5 ml dried oregano

  • 5 ml sea salt

  • 2.5 ml ground black pepper

  • olive oil or ghee for frying

Optional toppings:

  • butter lettuce (optional)

  • sliced tomato (optional)

  • sliced red onion (optional)

  • sliced cucumber (optional)

  • fresh mint or parsley (optional)

  • basil pesto (optional)

  • feta cheese (optional)

How to make Greek turkey burgers

  1. In a large mixing bowl, combine the turkey meat with the spinach, olives, lemon zest, onion, mint or parsley, garlic, oregano, salt, and pepper using your hands. Be careful not to overmix, as this can make the meat tough. Divide the mixture into 6 equal portions and shape them into burgers.

  2. Heat about 15 ml of olive oil or ghee in a large frying pan over medium-high heat.

  3. Working in batches, add the burger patties to the pan. Fry them on one side for about 5 minutes, then flip and fry on the other side for an additional 4–5 minutes, or until golden brown.

  4. If desired, serve each burger on a large piece of butter lettuce and top with your choice of optional ingredients.
